Letter: Mimi's in Maxwell not fast food

I am writing in response to the letter by Celeste Guana "Fast Food in Maxwell."

Mimi's Restaurant is an authentic Mexican food restaurant, and just like Kim's Deli and the Maxwell Inn, it cannot be compared to fast food. Yes, our burritos do cost about $2 to $3 more than a Taco Bell burrito, but I would rather pay a little more and wait a little longer to get a bigger, fresher, tastier and healthier burrito.

Owning a small business is more than just a decision, it's about having your personal money invested into the business and being dedicated to it. It's more than a job, it becomes your day to day life.

These times are hard for all small business owners. We all struggle day to day, thinking about how to lower the prices, when everything being used in meats, produce, bread, etc., is more costly and without loosing the quality of the food our customers came to appreciate.

I think that a fast food restaurant would have problems operating in this small town. Big fast food chains have to meet a daily sales standards to operate successfully and their ability to offer low prices needs to be met with high demand. With four to five other fast food choices 10 to 20 miles down the road, I think it wouldn't be able to meet those sales standards here.

We at Mimi's Restaurant would like to thank Christy Edwards and Mike Bell for their support. Also, we thank anyone that has come in to eat one of our delicious meals. Join us for a delicious meal at Mimi's in Maxwell.
